    - Cut the onion, cucumber and apple into small cubes. Set aside. 
 
    - Chop the toasted almonds. 
 
    - Cut the avocado into medium cubes 
 
    - Serve the gazpacho in a deep bowl and add a splash of lemon and virgin olive oil.
